The Angel’s Share Explained
The Angel’s Share is one of the most poetic expressions in the spirits industry, but it describes a very real process that affects the flavour, volume and value of every maturing cask.
What Is the Angel’s Share?
The Angel’s Share is the portion of spirit that naturally evaporates from a cask during maturation. As a cask breathes through the pores of the wood, alcohol and water slowly escape into the surrounding atmosphere.
Distillers and warehouse workers have long referred to this loss as the share taken by the angels watching over the warehouses.
How Much Spirit Is Lost?
The amount lost depends on climate, warehouse conditions, cask size, wood type, spirit type and the duration of maturation.
In Scotland, whisky casks typically lose around 1.5% to 2.5% of their contents per year. In warmer climates, such as the Caribbean, evaporation can be much higher, with some rum casks losing 6% to 10% or more annually.
Does Alcohol or Water Evaporate First?
The answer depends on the environment. In cool and humid warehouses, alcohol often evaporates slightly faster than water, which can cause the alcoholic strength of the spirit to decrease over time.
In warmer or drier conditions, water may evaporate faster than alcohol, sometimes causing the ABV to increase during maturation.
Why the Angel’s Share Matters
Although evaporation reduces the number of bottles that can eventually be produced, it is also part of what gives aged spirits their depth and complexity.
As the cask breathes, oxygen interacts with the spirit, compounds are extracted from the wood, harsh notes soften and new aromas develop.
The Impact on Cask Value
For cask owners, the Angel’s Share directly affects the economics of a cask. A cask filled with 250 litres may contain significantly less spirit after 15, 20 or 30 years of maturation.
This reduction in volume is one reason mature casks can become increasingly valuable. Buyers are not only paying for age and quality, but also for the spirit that has survived decades of evaporation.
Can the Angel’s Share Be Reduced?
Some evaporation is unavoidable, but warehouse operators can influence it through temperature control, humidity management, warehouse design and careful cask selection.
However, completely eliminating the Angel’s Share would also interfere with the natural maturation process. Most producers accept it as an essential part of creating exceptional spirits.

Conclusion
The Angel’s Share is much more than a romantic expression. It is a natural process that shapes every mature whisky, rum, cognac, armagnac and calvados.
Every year, a small portion of spirit disappears into the atmosphere, reducing the volume in the cask while helping to develop flavour, aroma and complexity.
